Rocket has a delicious peppery taste and is a perfect combination with good quality Italian prosciutto. Here’s a quick recipe that shows salad doesn’t have to be boring.

Ingredients You’ll Need

  • Bag of Rocket (70 grams)
  • 4 Cherry Tomatoes
  • 1 White Onion
  • Parmesan Reggiano
  • 2 Slices of Prosciutto
  • ¼ Lemon
  • 1 tbsp Olive Oil
  • 1 tspn Balsamic Vinegar
  • Honey
  • Pepper
  • Salt

How to Make it

Step #1

Empty the entire bag of washed rocket greens into a large bowl.  Add the lemon juice, olive oil, balsamic vinegar, and a drizzle of honey directly into the bowl.  Mix with your hands.

Step #2

Crisp two slices of prosciutto in a pan for about 7 minutes on medium-high heat.  However, alter the time depending on your preference.

Step #3

While the prosciutto is in the pan, wash and quarter the cherry tomatoes and thinly slice the onion.  Also, thinly grate or slice the parmesan to your liking.  I used approximately 2 tbsp.  Add these to the rocket greens.

Pro Tip

Mixing the dressing and the greens before adding the toppings is best.  If you toss your salad after adding the toppings they will fall to the bottom.

Step #4

Remove the Prosciutto from the pan and break into small pieces before adding to your salad.

Add salt, pepper and any other preferred toppings, such as chili flakes.
